Kick off the start to summer by getting together with friends to create the ultimate summer play list! Pick out your favorite up-beat tunes and then dance, exercise, or just listen along while you enjoy the nice weather.

 

Check out the recipes below from the February Substance-Free Saturday. Remember to ask for adult help with chopping ingredients or using the oven. Have fun!

 

Hummus

1 can garbanzo beans (15 oz) Drain and save the juice.
1/2 cup bean juice
4 tbs lemon juice
1/2 cup tahini
4 garlic cloves
1 1/4 tsp onion powder
Salt and pepper to taste

Mix all ingredients in a food processor until smooth. Serve with carrots, green and red pepper sticks or whole wheat pita bread. Also, try mixing in your own favorite spice mixes for a different flavor!

 

Vegetable Pita Pizzas

2 large pita, 100% whole-wheat
cooking spray
1/2 cup(s) assorted fresh vegetables
(such as small broccoli or cauliflower florets, red sweet pepper strips, sliced fresh mushrooms, and/or chopped carrot)
1/4 cup(s) pizza sauce
1/4 cup(s) cheese, mozzarella, shredded

1. Preheat oven to 400°F. Place pita bread rounds on a baking sheet. Bake for 5 minutes.

2. Meanwhile, coat an unheated small skillet with nonstick cooking spray. Preheat over medium heat. Add the vegetables; cook and stir until crisp-tender.

3. Spread pizza sauce on pita bread rounds; sprinkle with cooked vegetables and cheese. Bake for 8 to 10 minutes more or until light brown. Serve warm.

 

Spinach Artichoke Dip

10 oz bag of fresh spinach, stemmed and finely chopped
1 jar of artichoke hearts, drained and coarsely chopped
2 8oz. containers of cream cheese softened
½ C. grated parmesan cheese
¾ C. shredded mozzarella cheese
1 tsp. salt
1 tsp. pepper

Mix ingredients and bake 20 minutes at 350, or until bubbly. Serve warm with tortilla chips or whole grain crackers.

 

Mexican Fiesta Layered Dip

1 can of refried beans
1 8oz container of sour cream
1 8oz container of guacamole
1 jar of mild salsa
2 cups of shredded cheddar cheese
2 medium tomatoes diced
1 small container of sliced black olives

Spread above ingredients in a 9X13 pan, in the order they appear.

Serve cold with tortilla chips

 

Fresh Salsa

3 large tomatoes diced
1 small red onion diced
2 jalapenos seeded and diced
(you can add more or less depending on
how spicy you want the salsa)

1 t. diced garlic
½ C. fresh cilantro, finely chopped
1 t. cumin
1 t. salt
The juice of one lime

Mix all ingredients and serve chilled with tortilla chips or quesadillas.

 

Quesadillas

1 package of 10 inch flour tortillas
1 lb. shredded cheddar cheese

Warm tortilla in skillet by rotating and flipping quickly. Sprinkle cheddar cheese on ½ of the tortilla. Fold in half and cut into wedges. Serve warm with salsa or dip.
